      Enzymes are natures catalysts, they make chemicals in our bodies and have evolved over millions to do these reactions really well. They can be a lot more selective then chemical catalysts that we make ourselves, and they also work in water at room temperature – this is a big advantage compared with normal chemicals which often need organic solvents (flammable, sometimes toxic) and high temperatures (lots of energy) to work. So what I do with enzymes is try to make them produce chemicals that are useful for us in the lab, so that we can replace old chemicals, that are bad for the environment and not as efficient, with them!
